Abstract The article examines the role of commodity science tools in increasing the added value of authentic local products within the framework of craft and farm tourism in the context of Ukraine’s economic recovery. The study focuses on how the application of quality assessment, certification, geographical indications, labeling, packaging, and traceability mechanisms contributes to strengthening the competitiveness of local products and enhancing their integration into tourism offerings. Emphasis is placed on the ability of these tools to transform traditional products into high-value components of the tourist experience. The research highlights the importance of authentic local products as key elements of regional tourism development, capable of generating economic, cultural, and social benefits. Particular attention is paid to the role of product quality characteristics, including organoleptic, physicochemical, and safety indicators, in shaping consumer perception and trust. The study demonstrates that the combination of tangible quality attributes and intangible factors such as origin, authenticity, and storytelling significantly increases the perceived value of products. The article also explores the impact of certification systems, including organic standards, as well as geographical indications, in ensuring product differentiation and market positioning. These instruments contribute to price premium formation and support the development of regional brands. Additionally, the study addresses modern consumer trends, such as the growing demand for environmentally sustainable, locally sourced, and traceable products, which further reinforces the relevance of commodity-based approaches. Methodologically, the research is based on a systemic and structural-functional approach, incorporating comparative analysis of existing practices and theoretical frameworks in commodity science and tourism studies. The study synthesizes both qualitative and analytical insights to evaluate the effectiveness of various tools in enhancing product value and supporting sustainable tourism development. In conclusion, the article substantiates that commodity science tools serve as a strategic mechanism for increasing the added value of authentic local products, fostering regional economic growth, and strengthening the sustainability of craft and farm tourism. Their comprehensive implementation enables the transition from price-based competition to value-based positioning, contributing to long-term development and resilience of regional economies.
