Formation of wheat spelta quality under the influence of nitrogen nutrition

Abstract The features of spelt wheat nitrogen nutrition in Right-Bank Forest-Steppe of Ukraine are described. We studied the effect of different doses of nitrogen fertilizers on protein content and gluten in grains. During the experiment was grown the variety of spelt wheat Zarya Ukrainy. The research was conducted at the experimental field of Uman NUH during 2011 – 2013. The influence of different fertilizers on protein and gluten content in spelt wheat were shown. It was established that the protein and gluten content in spelt wheat were greatly influenced by the weather conditions, terms and methods of application of nitrogen fertilizers. The influence of different rates of nitrogen fertilizers on protein and gluten content in spelt wheat were shown. Protein yield per 1 ha of cultivated area was calculated. Were collected recommendations on the use of nitrogen fertilizers to improve the quality of spelt wheat grain.
